Black Bean Quinoa Salad

 

This recipe is perfect for all of your summer cookouts and picnics. Choose your favorite colors and flavors that are readily available in your area this time of year!

It is best served cold.

Black Bean Quinoa Salad Recipe
INGREDIENTS:

1 cup of cooked quinoa

2 cups of cooked black beans

2 Tablespoons of chopped red onion

1 cucumber chopped

3 mini peppers (red, yellow, and orange)

1/4 cup of washed cilantro

2 limes juiced

1/3 Cup of olive oil

2 Tablespoons of red wine vinegar

1 teaspoon of ground cumin

salt and pepper to taste

 

Optional Ingredients

corn

avocado

nutritional yeast

 

Toss all ingredients together in a bowl and enjoy!
