Delicious Gluten Free Peanut Butter Muffins Recipe
INGREDIENTS:

1 cup of peanut butter or any nut butter

2 medium bananas

2 large eggs–for a dairy free version-mix together 2 T of boiling water and 2 T of ground flaxseed. Add to recipe as you would eggs

1 tsp vanilla

2 T maple syrup

1/2 tsp baking soda

1 tsp Apple Cider Vinegar

Toppings: Feel free to add unsweetened coconut, raisins, chocolate chips etc.

Preheat oven to 400 degrees. Place all ingredients in a blender. Blend until mixed. Pour into greased muffin tins. Makes 24 mini muffins or 10 regular sized muffins.

Cook 15 minutes and 10 minutes for minis.
