Oatmeal Raisin Breakfast Cookie

IMG_9888These cookies are fantastic to make ahead and freeze. We add fruit with these cookies for those on-the-go mornings.

Oatmeal Raisin Breakfast Cookie Recipe
INGREDIENTS:

 

3 cups all purpose gluten free flour

2 cups organic rolled oats (gluten free)

1/4 cup maple syrup

1/4 cup black strap molasses 

1/2 t Celtic sea salt

1 tsp baking soda

1 tsp nutmeg

1 tsp cinnamon

1 cup organic raisins

2 eggs

3/4 cup grapeseed oil

1/2 cup coconut milk

1 t vanilla

 

Mix all ingredients into a bowl and drop by rounded Tablespoons 2 inches apart on lightly sprayed cooking sheet. Bake at 350 degrees for 13 minutes.
