I wanted to use some butternut squash up recently and found a great recipe! This is a great way to fix butternut squash!
1 cup of cooked and mashed black beans
1 cup of cooked and mashed butternut squash
1/2 of an onion
1/2 cup of cut celery
2 cloves of garlic
1 Tbs. of grape seed oil
1tsp. of Italian seasoning
1/2 tsp. of powdered garlic
1/2 tsp. of dried parsley
1/4 tsp. of salt
1/8 tsp. cayenne pepper
1 1/2 cups of rolled oats
3 Tbs. of water
2 Tbs. of flaxseed
Topping
Romaine lettuce
Vegenaise
Pickle
Directions
Grind the flaxseed and put in bowl with water, stir and let it set in the fridge. (This is the egg substitute.) Next in another bowl add mashed beans and mashed butternut squash. In a pan add onion, celery, minced garlic, oil, Italian seasoning, powdered garlic, dried parsley, salt, and cayenne pepper until browned. After your spices and vegetables are done cooking, toss the rolled oats, vegetables, and the egg substitute together. In a skillet, cook the burgers till they are golden brown on each side.
