Best Mexican Tofu Breakfast Scramble

I’ve seen several varieties of this recipe, however, this one is very versatile and can swap out egg for tofu. A lot of people eat according to their blood type.  What blood type are you and what foods work for your body?

One of my kids has blood type O and she made egg scramble while my AB blood type child preferred the tofu variety. Eat what works for your body!

Best Mexican Tofu Breakfast Scramble Recipe
INGREDIENTS:

Serves 4

2 tsp of grapeseed oil

1 onion, finely chopped

1 medium green pepper, finely chopped

1 medium red bell pepper, finely chopped

1/2 tsp coriander

1/2 tsp cumin

1/2 tsp salt–I omitted until after cooking and each person added what they needed. Some added more salsa instead of salt–What does your body need?

2 dashes of turmeric

2 cups of cooked beans or 1 can of black beans, drained

14 oz extra firm tofu, drained and mashed or 3-4 eggs-scrambled

4 T cilantro- finely chopped fresh

1/2 cup salsa

1 medium tomato, chopped

1 medium avocado, chopped

 

Heat oil over medium heat

Add onion, peppers, cook, stirring frequently for 4-6 minutes until onion is translucent. 

Add spices, black beans, tofu, cook stirring frequently for 3-4 minutes or until heated through.

Divide tofu mixture between 4 serving plates. Top with cilantro, salsa, tomato and avocado. Serve immediately!
