Every year for New Year’s we have Black-Eyed Peas, Kale, and cornbread. We aren’t superstitious, for us, it is just a fun meal. We do have it other times too.

Black-Eyed Peas Recipe
INGREDIENTS:

Black-eyed Peas

Soak black-eyed peas in water. I add juice of a lemon to the water. I also add a small piece of Kombu seaweed for the extra minerals. Soak overnight, drain and rinse.

Cook in a crockpot on low for 6-8 hours.

 

In an Instant Pot cook the beans for 15 minutes on the bean function button.
