Black Rice-Instant Pot

IMG_4127Rice has been a staple to many people groups for thousands of years.  Black rice was popular in China as being the emperor’s and the royal family’s food. It was forbidden for commoners to eat.

Black rice has been categorized as a superfood as it provides many great health benefits. Black rice has been shown to reduce plaque in arteries. (1) It also has a positive effect on cardiovascular health due to the beneficial fiber that it provides. (2)

Black rice is known for being loaded with anti-inflammatory properties, anti-aging, and high levels of Vitamin E. Black rice has a deep black or even purple hue showing its high antioxidant levels.

Black Rice-Instant Pot Recipe
INGREDIENTS:

How to prepare black rice in an Instant pot. 

First soak rice overnight or for 8 hours by adding enough water to completely cover the rice. Add 1 lemon squeezed into the rice. Soaking rice helps break down the phytic acid in the rice and helps to remove any impurities.

After 8 hours rinse well multiple times. 

For 2 cups of black rice add approximately 3 to 3 1/2 cups of water. The water line should be 1/4 inch above the rice.

Cook for 22 minutes on manual mode.

Allow it to cool down for 17 minutes.

 

Open the top and enjoy your perfect forbidden rice.
