Enchilada Turkey Lettuce Wraps Recipe
INGREDIENTS:
For the Salad:
1 cup of frozen
1/2 cup of diced tomatoes
1/4 cup of sliced scallions
1 Tablespoon of cilantro
1/2 of a lime juiced
For the Turkey:
1 pound of lean ground turkey
1 can of black beans rinsed
1/4 cup of water
1 cup of enchilada sauce
For the wraps:
15 lettuce cups
Add all the ingredients for the salad together in a bowl and place in fridge. Over medium-high heat, cook the turkey until done and then add the beans, water, and enchilada sauce and cook until the sauce is thick. On lettuce, Add some of the turkey and then on top add some of the salad.
