Gluten Free Butter Biscuits Recipe
INGREDIENTS:

1 3/4 cups gluten free all purpose flour 

3/4 teaspoon xanthan gum

1/4 cup arrowroot

1 tablespoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon kosher salt

2 teaspoons honey

8 tablespoons unsalted butter cut into a 1/4-inch pieces 

1 cup coconut milk

1 Tablespoon vinegar 

1 tablespoon melted unsalted butter 

 

Preheat your oven to 425°F. In a bowl, mix the flour, xanthan gum, arrowroot powder, baking powder, baking soda, salt and whisk together. Add the diced butter and mix well. Create a well in the center of the dry ingredients, add the milk and vinegar and mix until combined. Work quickly so the dough doesn’t get warm, place a spoonful of the mix on a baking pan about 2 inches apart from each other. Brush lightly with the melted butter. Place the baking sheet in the center of the preheated oven and bake until lightly golden brown all over (about 15 minutes). Remove from the oven and allow to set briefly before serving.
