Gluten Free Millet Muffins

These gluten free muffins are a delicious breakfast and are very simple!

Gluten Free Millet Muffins Recipe
INGREDIENTS:

 

1 1/2 cups of brown rice

1/2 cup of millet

1 1/2 cups of water

1 banana

1 t. of salt

3 T. of olive oil

3 T. of honey

 

 

1 T. of baking powder

 

For the toppings:

blueberries

pecans  

chocolate chips enjoy life

cacao nibs

goji berries

 

 

Soak the millet and brown rice with the water overnight in your vitamix blender. (This helps the germination process, breakdown of physic acids and makes the grain easier to blend.)

Preheat the oven to 350º.

Add the banana, salt, olive oil, honey and blend until gritty. Add the baking powder blend for a couple of seconds until mixed.

Spray a muffin pan with coconut spray. Add any toppings and put in the oven for 25-30 min. Take out and cool.
