This recipe is a favorite at our house. It has a unique blend of Curry and Indian flavors. One of my kids begged for this for her birthday dinner. It is absolutely delicious!
Vegetables
1 cup diced carrots
1 onion, diced
1 cup green, red, yellow peppers (frozen mix or fresh)
2 cloves garlic
4 small zucchini
Sauce
1 cup tomato sauce
2 T peanut butter
2 T Coconut Aminos or Gluten Free Tamari sauce
1 T Homemade Curry Powder **see note
salt to taste
1/2 cup fresh cilantro-optional
1 cup cooked garbanzo beans
1 cup frozen peas
HomeMade Curry Powder ** I quadruple this recipe and keep it in my pantry in an old spice jar or glass bowl for a quick dinner. It will last a good while.
2 T cumin
2 T coriander
2 tsp garlic powder
2 tsp turmeric
2 tsp fenugreek
Heat and serve over rice.
