Indian Curry

IMG_4113This recipe is a favorite at our house. It has a unique blend of Curry and Indian flavors. One of my kids begged for this for her birthday dinner. It is absolutely delicious!

Indian Curry Recipe
INGREDIENTS:

 

Vegetables

1 cup diced carrots

1 onion, diced

1 cup green, red, yellow peppers (frozen mix or fresh)

2 cloves garlic

4 small zucchini

 

Sauce

1 cup tomato sauce

2 T peanut butter

2 T Coconut Aminos or Gluten Free Tamari sauce

1 T Homemade Curry Powder **see note

salt to taste

1/2 cup fresh cilantro-optional

 

1 cup cooked garbanzo beans

1 cup frozen peas

 

HomeMade Curry Powder ** I quadruple this recipe and keep it in my pantry in an old spice jar or glass bowl for a quick dinner. It will last a good while.

2 T cumin

2 T coriander

2 tsp garlic powder

2 tsp turmeric

2 tsp fenugreek

  1. Placed diced carrots, onion, peppers, garlic in a kettle with a small amount of water and a small amount of grapeseed oil. Add curry powder and simmer for 5 minutes
  2. Add zucchini, cover and simmer 5 more minutes
  3. Blend the tomato sauce, peanut butter, Aminos, curry powder and salt in high powered blender until smooth. Add this sauce to the cooked vegetables Add the frozen peas and garbanzo beans to the cooked vegetables. 

Heat and serve over rice.
