Key Lime Tart Recipe
INGREDIENTS:

Crust:

1 cup of Coconut flakes

1 cup of macadamia nuts

1 Tablespoon of maple syrup

1/2 teaspoon of salt

 

In a food processor, process the coconut flakes so that they are fine, add the macadamia nuts and mix until it is a little clumped together. Add the maple syrup and salt and mix until it stick together. Place the mix in a bowl and set in the fridge foe 1 hour.

 

Filling:

 

1/2 cup of coconut oil

1/2 tablespoon of lime zested

1/2 cup of lime juice

1/4 cup and 1 tablespoon of maple syrup

2 avocados

 

Mix all the ingredients for the filling in a blender. In a tartlet tin, place plastic wrap around date inside before forming the crust. Add 2 1/2 tablespoons of the crust into the tin and press the bottom and the side to form a rim. Pour 1/3 cup of filling into each tartlet. Place the tartlet into the freezer until hardened. Take out of the freezer and remove from tin.
