Moms ask me what my kids eat for lunch. My kids make their own lunch at 11 years old. This is one day’s clever lunch idea that she packed. She even took the pictures. This is leftover black beans from the night before, topped with fresh salsa and finished with a bit of cooked basmati rice, Terra chips, pomegranate seeds, broccoli.
Kids Lunch Recipe
INGREDIENTS:
pomegranate seeds
steamed broccoli
terra chips
1/2 cup of canned black beans drained and rinsed
1/2 cup of cooked basmati rice
1/2 cup of pico
In an container add the black beans first and then pico and rice in layers. Place broccoli in a container as well as the chips and pomegranate seeds.
