Mediterranean Inspired Buddha Bowl Recipe
INGREDIENTS:

2 cup of cooked Quinoa 

1 cup green peas

falafel mix

1-2 avocado sliced

2 cups of steamed broccoli  

1 pepper chopped

1/2 onion chopped

 

Chickpeas:

2 cups of cooked chickpeas

salt

pepper

chili powder

garlic

oregano 

 

sauce:

1/2 cup tahini

1 tablespoon honey

1 lemon lemon

1/4 cup hot water

 

mixed veggies:

olive oil

3 chopped sweet potato

2 carrots peeled and cut

buttersquash (optional)

 

Preheat oven to 450 and cook the mixed veggies for 20 mins or until soft and brown. Make falafel according to your mix. over medium heat, add the oil and onions and sauté until onions are translucent. Add the peppers and cook until soft. In a bowl. mix the spices with the chickpeas so that they are evenly coated. Mix the ingredients for the sauce in another bowl. Once everything is finished cooking, spoon out a little bit of quinoa on the bottom of  the plate or bowl and then add the mixed veggies, chickpeas, green peas, avocado, broccoli, and falafel surrounding the quinoa. Lastly, add the sauce in the center and serve.
