For the Toast:
large sweet potatoes
coconut spray
For the Nutty Banana:
1 slice of potato toast
1 banana sliced
peanut butter or almond butter
cacao nibs
coconut shreds
Toppings for Guacamole:
1 slice of potato toast
1 avocado mashed
1/2 lime juiced
5 grape tomatoes sliced
1 T of red onion sliced
sprinkle of pumpkin seeds
sprinkle of hemp seeds
Toppings for Strawberry & Banana Yogurt:
1 slice of potato toast
strawberries sliced
banana sliced
mint
coconut yogurt
Preheat the oven for 350º. Wash the sweet potatoes well and slice them thickly with a mandolin slicer. Spray a pan with the coconut spray and place the potato slices in the pan. Cook for 15-20 minutes or until slightly soft but not so it is mushy. Place in a toaster just so it is a bit crunchy on the outside. Add toppings and enjoy!
