Tomato Cucumber Stacks

This salad is refreshing on the last few days of warm weather. We have enjoyed fresh tomatoes and cucumbers all summer!

You may choose to stack these or cut up like a salad.

Tomato Cucumber Stacks Recipe
INGREDIENTS:

2 large tomatoes

2 cucumber

1/4 red onion

8 or more basil leaves

You may stack a slice of each.

 

For the red onion-soak it in equal parts water and apple cider vinegar for at least 20 minutes or overnight.

 

For the dressing:

2 cloves of garlic, minced

3 T olive oil

2 tsp apple cider vinegar (with the mother)

1 drizzle maple syrup –or omit

1/4 tsp dijon mustard

pepper to taste

 

Whisk all ingredients and pour on top of stacks. 

Variation: cut up above ingredients and add the dressing over the top.
