Vegan Pinwheels Recipe
INGREDIENTS:

Gluten free Tortillas

Lettuce

 

For the Filling:

4 cups of cooked chickpeas

1 large avocado

1 jalapeño chopped

1/4 red onion chopped

1/4 cup of Vegenaise 

1 teaspoon of Sriracha sauce

Salt to taste

Garlic to taste

Pepper to taste

 

In a bowl, mash the chickpeas with a fork until mostly smooth. Add the Avocado and do the same. Mix in the rest of the ingredients for the filling and let it sit in the fridge for 30 minutes. Place a tortilla on a cutting board and spread a layer of the filling on to it. Add a couple pieces of lettuce to it and slowly roll up the wrap so that it is tight. Cut into bite size pieces.
