Zucchini Curry Soup

 

 

This soup is an excellent thick, rich and creamy soup that will warm your heart. It is perfect for summer due to the fresh veggies in it and awesome in the fall/winter. You may swap for ANY vegetable. It is very easy and sure to please even your picky eaters. What a great way to sneak more veggies in your kids diet!

Zucchini Curry Soup Recipe
INGREDIENTS:

4 cups of zucchini sliced

2 t of salt

4 T of ghee, butter, avocado oil, or coconut oil (some type of healthy fat. It is excellent for the brain!)

1-2 cups of chicken broth

 

1 t of homemade curry

 

 

For the Homemade Curry:

2T of cumin powder

2 T of coriander powder

2 t of garlic powder

2 t of turmeric powder

2 t of fenugreek

 

Push the sauté mode on your Instant Pot and add the ghee, this is to heat the Instant Pot. (about 1 min.) Next add the veggies, broth, and salt. Push the cancel button and then seal the top. Next push the manual mode and set for 7 min. After done, release the pressure and blend in a vita-mix 1 teaspoon curry and blend well. Serve hot.  

 

Optional: You may exchange for ANY vegetable. Squash and zucchini work well together!
