Eleven Bean Soup

Eleven Bean Soup Recipe
INGREDIENTS:

1lb. of 11 bean soup mix without seasoning

1 onion chopped

1 cup of chopped celery

1 cup of chopped carrots

2 cloves of minced garlic

64 oz. vegetable broth

1 tsp. crushed dried thyme

1 tsp. smoked paprika

1/2 tsp. cayenne pepper

1 bunch of kale

14.5 oz diced tomatoes 

 

Soak beans overnight. Over medium heat, cook the onion, celery, carrots, and minced garlic for 5 minutes. In an Instant Pot, add the cooked vegetables, along with the broth, thyme, smoked paprika, and cayenne pepper. Set to soup mode and cook for 1 hour. Add the kale and the can of diced tomatoes and let it sit in the Instant Pot for 5 minutes before serving.
